Today the U.S. FDA issued a warning that fresh spinach sold in bags may be contaminated with E.coli bacteria (strain O157:H7), and should not be eaten until further notice.  Nationwide, 50 cases of have been reported, including eight cases resulting in kidney failure and one death.  So far, cases have been reported in  Connecticut, Idaho, Indiana, Michigan, New Mexico, Oregon, Utah and Wisconsin, but due to the nationwide nature of food distribution, other states may be affected.

The most common effect of an E.coli "food poisoning" is severe and often bloody diarrhea, but healthy adults generally recover within a week, but elderly or very young patients are most likely to develop complications, which may include kidney failure.

E.coli is a bacteria that naturally occurs in the intestines, where it is considered to be a normal and BENEFICIAL bacteria that suppresses the growth of other harmful bacteria and synthesizes vitamins that are used by the human body.  However, there are some unusual strains of E. coli, such as O157:H7, that produce poisons.  Strain O157:H7 produces a poison that is severely damaging to the lining of the intestines.

E.coli, like other bacteria, is destroyed by cooking, and therefore the easiest way to get E.coli "food poisoning" is by eating raw food that has been contaminated by a toxin-creating strain of the bacteria, possibly due to poor sanitation or because the food was a fruit or vegetable fertilized with contaminated manure and not adequately cleansed.

Historically, undercooked or raw hamburger (ground beef) has been implicated in many of the documented outbreaks, however E. coli O157:H7 outbreaks have implicated alfalfa sprouts, unpasteurized fruit juices, dry-cured salami, lettuce, game meat, and cheese curds. Raw milk was the vehicle in a school outbreak in Canada.
